Production Process: This mezcal is crafted from wild Cenizo agave, which is native to the semi-arid highlands of San Luis Potosí. The agave plants take about 12 to 15 years to mature before they are harvested by hand. The hearts of the agave, known as piñas, are cooked in traditional underground ovens for several days, which imparts a deep, smoky flavor. After cooking, the agave is crushed using a tahona (a large stone wheel), and the resulting mash is fermented with naturally occurring wild yeasts before being distilled twice in copper stills.

On the nose, it presents delicate notes of herbal and earthy aromas, with a touch of citrus and floral hints.
