Description

"The same vineyards, the same grape varieties, only the winemaker has changed. This wine is already produced by the current winemaker of the winery, Jonathan Shotts, who joined the winery in 2015. It consists of 56% Cabernet Sauvignon, 34% Merlot, and 10% Petit Verdot. The harvest is done manually, with each grape variety being harvested separately. The Cabernet Sauvignon vines were planted in 1984 and 1992, and the Merlot comes from vines planted in 1996. The winemaking process involves semi-carbonic fermentation, separation of the grape clusters, and gentle pressing of the grapes using a centrifuge. Cold soaking for two days, inoculation with yeast, almost two weeks of fermentation, and an additional three days of maceration with the skins for extraction of color. Pressing, separate malolactic fermentation, and aging in barrels. All of this produces around 40,000 bottles per year. The wine is still young with aging potential. It has a fairly full body, rich and spicy, with a complex aroma of black fruit, chocolate, tobacco, and light smokiness. The wine has not been officially released due to the pandemic, so now is the time to get to know it."
